Bruschetta Appetizers

On Monday I had the pleasure of participating in the Taste of Altoona and meeting many of you. I had offered to make appetizers and when they told me I needed to bring 600 servings, I knew I needed something simple, quick and delicious.

I was asked for the recipe to the bruschetta appetizer and, after the Chicago Cubs’s big win last night, I thought some of you might want it for their next game on Friday.

Here’s what you’ll need:

Pita or Bagel chips. For Taste of Altoona I used these.

Tomatoes, basil and onion (optional).

Your favorite organic mozzarella shredded cheese (I used Horizon Organic).

Directions:

-Dice tomatoes, onion and basil and add to a bowl. Stir to combine.

-Spread chips out on serving platter.

-Put one spoonful of tomato mixture on each chip.

-Sprinkle with mozzarella.

They are incredibly easy and always a crowd pleaser! Good luck making your own version.
